But within two months they were looking for a new challenge – a search that ended quite by chance as they drove through the village of Bonchester Bridge near Jedburgh.
Their attention was drawn to the For Lease sign outside the local pub and now, two years down the line, they are happily ensconced as mine hosts at the Horse and Hound.
A former coaching inn dating back to 1701 the Horse and Hound is, quite naturally, at the heart of the local community but enjoys a glowing reputation that extends much further.
The pub, with nine en-suite rooms, is popular with visitors to the Scottish Borders and a top choice for good food.
High standards and attention to detail are par for the course with Lucy. A glimpse at her CV backs that up. She has run hotels, a contract catering business and, while in Abu Dhabi, was the residence manager at the British Embassy.
“It was a fabulous job and a great experience. It involved cooking for celebrities, diplomats, politicians and royalty as well as organising huge events and parties. When we came back to Scotland the idea was to spend time on the golf course and relaxing.
“It didn’t take long to realise that doing nothing was not an option for us. So we took on the Horse and Hound, carried out extensive refurbishments and recruited a chef. I am pleased to say it has all worked out very well.
“We get a lot of repeat business from people visiting the Borders including shooting parties, walkers and cyclists. Our rooms are decorated to a very high standard and some are fitted with steam rooms,” said Lucy.
The restaurant offers excellent pub grub, daily specials and an a la carte menu. Booking in advance is recommended for the Horse and Hound’s popular steak night on Thursdays and curry night on Friday.
Behind the bar there’s a selection of cask ales and a growing selection of quality wines.
